SHAMROCK SHAKE

1 c. Vanilla Almond Milk, Reduced Sugar
1 Scoop Vanilla Protein Powder (I use Body Fortress)
1 c. fresh baby kale leaves (feel free to use Spinach!)
2 branches of FRESH mint leaves (I just used the leaves, not the stems)
2 small packets of Stevia
Ice

Throw all of that in your blender.  Mix until thick and smooth and all of the kale leaves are completely chopped and blended.  Enjoy and be healthy!


SKINNY STIR-FRIED CHICKEN

• 2 Tbsp Extra-Virgin Olive oil
• 1 cup onion, chopped
• 1 cup frozen peas + carrots
• 2 cloves garlic, minced
• 2 eggs
• ½ lb boneless, skinless chicken breasts, cut in bite-sized pieces
• 4 cups brown rice, prepared (or 2 bags brown minute rice, prepared)
• ¼ cup reduced-sodium soy sauce

Heat 1 T oil in a large skillet on medium heat.
Saute chicken until no pink is left, set aside.
Heat 1 T. oil in same skillet.
Add onion, garlic, peas, and carrots and "fry" until the veggies are tender (onions will be close to clear).
Crack eggs into skillet and scramble, mixing throughout vegetables.
Add rice, chicken and soy sauce to skillet. Mix really well.

APPLE PIE PROTEIN SMOOTHIE

1 c. Reduced-Sugar Vanilla Almond Milk
1 scoop Vanilla Protein Powder (I use Body Fortress)
1/2 c. UNSWEETENED applesauce
Hearty dash of cinnamon
ice

Place all the ingredients into a blender.  Mix until ice is completely chopped up.  Enjoy!
